In my opinion, as result of my own experiences, the erected size does matter concerning the condition of the "hard"ware. If a 5incher is pretty well erected, it can satisfy by using propper techniques at all. In my case 6 inches always worked fine and a lot of my former girlfriends had of course fun with bigger cocks. But obviously there is no essential difference. Fortunately most of them did not met me under soft conditions at first time. It must be true that there is a point where a dick is so small it's just not good enough to do anything useful. Specifying that size may be harder, it would be different depending on the girl. 3 inches could be near the limit or past it, just guessing.
